Voyage MIA: Meet Jose Mallea of Biscayne Bay Brewing in Doral

Today we’d like to introduce you to Jose Mallea.

Thanks for sharing your story with us Jose. So, let’s start at the beginning and we can move on from there.
Biscayne Bay Brewing Company was founded in 2012. We began construction in January of 2012 and were producing beer by September of 2014. We are located in a 15,000 square foot facility in Doral warehouse with all the necessary technical requirements for a production brewery including a backup generator. It was important for us to find a location that fit our technical needs and was accessible to the greater Miami community. We began with three core styles and today offer 6 as well as limited release seasonal like our barrel aged beers.

In 2016, we opened our 3,000 square foot tap room where our fans can now come and enjoy our classic styles and a number of limited release tap-room only beers. Today there are 15 beers on tap for our customers to enjoy!

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Regulation, Permitting and Inspections. Those are the main obstacles to getting open. Most breweries have a vision and a passion for beer but are not always prepared for the burdensome red tape. We learned a lot of lessons along the way and are always up for sharing those lessons with other start-up breweries.

Alright – so let’s talk business. Tell us about Biscayne Bay Brewing – what should we know?
We specialize in making traditional styles of beer true to style, using the best possible ingredients. We also strive for exceptional quality and consistency in every batch. Miami is a relatively young craft beer market, and we wanted consumers to get to know classic styles and distinguish them from what they normally find on the shelves. We also enjoy experimenting with our barrel aging program, where we take different bold styles and age them in spirits barrels. Currently, we have beer in our taproom that’s been aged in rum and bourbon barrels.

In the past, we have experimented with Tequila and Whiskey barrels as well!
