Ocean Drive Magazine: Pitcher Perfect

BISCAYNE BAY BREWING COMPANY IS QUICKLY EXPANDING INTO THE RETAIL MARKET SERVING UP THE BEST ALE IN THE 305.

BY BECKY RANDEL

Unless you’ve been hiding under a barrel, you’ve likely noticed that local craft beer and homegrown breweries have become a boom – ing business in South Florida. Case in point: Biscayne Bay Brewing Company has quickly grown from a direct-to-restaurant cult favorite to a full distributor of bottled varieties with a popular tap room. “Miami is still a very young craft beer market and I am confident we will continue to grow our fan base of loyal craft beer drinkers,” says co-founder and President Jose Maella. Based in Doral, BBBC is a 15,000-square-foot facility serving 10,000 beers per week in its thriving tap room while distributing to more than 300 accounts from Palm Beach to Key West. Their three bottled flavors—Kapitan’s Kolsch, Siren’s Saison and Miami Pale Ale—are sold at more than 30 retail locations, such as Total Wine & ABC Liquors. For a company that has doubled its production since opening the tap room in 2016, Maella says their top priority is maintaining consistency and flavor across all of their products. “We want our customers to appreciate the diversity of flavor in beer and always know that they can try our product with confidence at their favorite bar, restaurant or local store and it will be exactly the same experience every single time.” Need more proof? The ales and lagers themselves are made with hops and malts sourced from around the world, infused with the waters of the Biscayne Bay aquifer. The line currently boasts six core offerings and a total of 16 unique styles in the tap room, including aged barrel beers. We’d tap that. 8000 NW 25th St., Doral, biscaynebaybrewing.com

Voyage MIA: Meet Jose Mallea of Biscayne Bay Brewing in Doral

Today we’d like to introduce you to Jose Mallea.

Thanks for sharing your story with us Jose. So, let’s start at the beginning and we can move on from there.
Biscayne Bay Brewing Company was founded in 2012. We began construction in January of 2012 and were producing beer by September of 2014. We are located in a 15,000 square foot facility in Doral warehouse with all the necessary technical requirements for a production brewery including a backup generator. It was important for us to find a location that fit our technical needs and was accessible to the greater Miami community. We began with three core styles and today offer 6 as well as limited release seasonal like our barrel aged beers.

In 2016, we opened our 3,000 square foot tap room where our fans can now come and enjoy our classic styles and a number of limited release tap-room only beers. Today there are 15 beers on tap for our customers to enjoy!

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Regulation, Permitting and Inspections. Those are the main obstacles to getting open. Most breweries have a vision and a passion for beer but are not always prepared for the burdensome red tape. We learned a lot of lessons along the way and are always up for sharing those lessons with other start-up breweries.

Alright – so let’s talk business. Tell us about Biscayne Bay Brewing – what should we know?
We specialize in making traditional styles of beer true to style, using the best possible ingredients. We also strive for exceptional quality and consistency in every batch. Miami is a relatively young craft beer market, and we wanted consumers to get to know classic styles and distinguish them from what they normally find on the shelves. We also enjoy experimenting with our barrel aging program, where we take different bold styles and age them in spirits barrels. Currently, we have beer in our taproom that’s been aged in rum and bourbon barrels.

In the past, we have experimented with Tequila and Whiskey barrels as well!

Is there a characteristic or quality that you feel is essential to success?
Balance, drinkability, consistency, always striving for exceptional quality.

Biscayne Bay Brewing Co. is regarded as one of the best breweries in Miami. They are famous for being one of the only breweries that has multiple barrel aged beers.

I visited the brewery, got a tour from the owner Jose, and tried a dozen of their beers. From the bottling line, to the aging tanks, barrels and the tap room, the tour was epic!

Miami.com: How to celebrate Oktoberfest, Miami style, at our local beer breweries

The craft brew scene is spilling over more than the head of a badly poured pint (don’t worry, that won’t happen at any of these places).

Locally brewed beer is as hot as a Miami summer. And as we approach all the Oktoberfest celebrations, you’re going to want to know where to enjoy them.

So here’s your ultimate guide, from the brewmasters and bartenders themselves, on their “Most Miami” brews — and where to find them.

Biscayne Bay Brewing

Coming up on their one-year anniversary this month, Biscayne Bay Brewing in Doral keeps expanding its beer selection. If you had to choose one to represent the 305 it would be the Miami Pale Ale. The 5.5 percent American Pale Ale is described as a “moderate, refreshing ale with noticeable hop aroma balanced by supporting malt flavors.” It’s the perfect description for the way they like to brew beer, says Co-founder and President Jose Mallea. Miami Pale Ale is available at select Total Wine Stores and Whole Foods Markets.
